Mozzarella, Tomato, & Basil Couscous Salad

This always gets rave reviews. It's the perfect summer salad/side dish.


Ingredients:
2 c. diced tomato

3/4 c. diced mozzarella cheese

3 T. minced red onion or shallots

1 T. olive oil

2 t. red wine vinegar

1 t. minced garlic

1/2 t. salt

1/2 t. black pepper

1 1/4 c. water

1 c. uncooked couscous

1/4 c. chopped fresh basil



Directions:
Combine first 8 ingredients (tomato thru black pepper) in a large bowl; cover and marinate in refrigerator for 30 minutes. Bring water to boil in medium saucepan; gradually stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork; cool. Add couscous and fresh basil to tomato mixture; toss gently.

    Jim made turkey burgers stuffed with feta and parsley tonight! Yummy! I added a spoonful of my leftover kohlorabi and parsley pesto with a zing of lemon to the burger and it was heaven.
