Scotch Eggs

Great looking dish that is fun to serve. Can be made ahead and served cold as an appetizer.


Ingredients:
12 small to med hard boiled eggs

1 bowl filled with AP flour

1 bowl filled beaten eggs

1 bowl filled with Panko breadcrumbs

1-2 lbs breakfast sausage (can add fresh chopped herbs if desired)

Salt and pepper

Peanut oil for frying

Mustard greens

Spicy Mustard Sauce:

1/4 C stone ground mustard

1/2 C dijon mustard

1/2 C Mayo

4 dashes hot sauce

salt and pepper

Chive Oil:

1 bunch chives

EVOO




Directions:
Set up a deep fryer with peanut oil and heat to around 350 deg. Make a breading station from left to right: hard boiled eggs (shelled), flour, sausage, beaten eggs, Panko, sheet pan. Roll egg in flour, pack sausage around egg in a thin layer, dip in eggs and roll in Panko. When all eggs are breaded cook a few at a time in hot oil around 5 min or until crispy and sausage layer is fully cooked. Immediately season with salt and pepper. Can be served hot or cold.



For spicy mustard sauce combine all ingredients (can be made in advance and chilled). For Chive oil combine chopped chives and olive oil in food processor or blender until combined.



To serve, slice eggs in half lengthwise and place on top of mustard greens on one half of a plate. On the other half spread out a healthy spoonful of the mustard sauce and drizzle sauce with green chive oil.
