Ingredients: |
1 T. vegetable oil

3 c. sliced fresh mushrooms

1 c. diced onion

1 can (15 oz.) stewed tomatoes, undrained

1/4 c. Italian dressing

3 T. tomato paste

1 pound boneless chicken breasts, sliced into strips

1 c. mozzarella cheese

2 slices bacon, cooked & crumbled

Directions: |
Heat oil in large and deep skillet on medium-high heat. Add mushrooms and onions; cook 5 minutes, stirring occasionally. Stir in tomatoes with their liquid, the dressing, and tomato paste. Once it starts to boil, add chicken, reduce heat, and cover skillet. Simmer 10 minutes or til chicken is cooked through. Sprinkle with cheese and bacon; simmer uncovered 5 minutes or til cheese is melted. Serve over rice.
