Crock Pot Chicken & Sausage Cacciatore

NOTE*- The original recipe for this does not call for the marinade for the chicken or for the vegetables and the meat to be sautéed in the butter prior to placing in the slow cooker. You can certainly do this to save time. However, I found by playing with the recipe, if you marinate the chicken, it doesn't become rubbery like some slow cooker/crock pot recipes. Also by sautéing the meat and the vegetables, it helps them retain their flavor a little better by sealing in the flavor.


Ingredients:
2 tbsp. butter

1 large green pepper (sliced)

1 cup mushrooms (halved)

1 medium onion sliced into rings

Wish Bone Italian Dressing

1lb. boneless skinless chicken breasts halved or cut in thirds

1lb. Italian sausage cut in half

1/2 tsp. dried oregano

1/2 tsp. dried basil

2 bay leaves

1 clove garlic

1 14oz. can diced tomatoes

2 tsp. sugar (optional)

1 1/2 cups of Italian style sauce (I use Prego)

small can of tomato paste





Directions:
1. Cover the chicken with the Italian dressing in a plastic bag and marinate overnight.



2. In a frying pan, melt the butter and lightly sauté the peppers and onion for a few minutes until they are slightly soft. Remove with a slotted spoon and place in the bottom of the slow cooker (crock pot). In the same pan, now add the mushrooms and garlic and sauté until the mushrooms just start to brown. Remove with the slotted spoon and add to the slow cooker.



3. In the same pan now lightly brown the chicken on both sides until it just starts to brown. Remove with slotted spoon and now place the chicken in the slow cooker on top of the vegetables. Pour 1/2 of the can of diced tomatoes on top of the chicken.



4. In the same frying pan, now slightly brown the sausage until it just starts to brown on all sides. Remove and add to the slow cooker and top with the remaining can of diced tomatoes.



5. Sprinkle the oregano, and basil in the slow cooker and add the bay leaves.



6. Top with the tomato sauce and sprinkle in the sugar if desired.



7. Cover and cook on low for eight hours.



8. Remove the cover for the last 30 minutes and add the tomato paste and stir to allow the sauce to thicken. There should be sufficient sauce for a side of pasta.






Serve with:

Noodles
