Easy Peasy Enchiladas

easy | 4 servings | prep: 10 minutes | cook: 30 minutes

Ingredients:
1 rotisserie chicken

shredded cheese

flour tortillas



Directions:
Buy a rotisserie chicken and shred the breast meat with two forks into a bowl (no skin)



Mix in a can of enchilada sauce and a handful (or 2 or 3) of shredded cheese,



Roll into tortillas and put the rolls in a casserole dish



Cover with more cheese



Bake covered at ~350 for ~20 minutes



Uncover and cook til cheese is bubbly.


Wine pairing:

cold corona and a lime

Serve with:

mexican rice
