Fruit Medley with Mint and Lime

Ingredients:
1 cup green grapes, 1cup red grades, 3 plums cut into wedges, 2 peaches cut into weges, 2 nectarines cut into wedges, 2 limes, 1 cup water, 1/4 cup sugar, 6 mint sprigs, 2 T. fresh chopped mint, 1 T. fresh lime juice, 1 tsp. grated lime



Directions:
Combine frist 5 ingredients in a large bowl, cover and chill. Carefully remove 6 strips of rind from limes using a vegetable peeler, try not to get too much of the white pithy part.Combine limes strips,water,sugar,and 6 mint sprigs in a small saucepan,bring to boil. Cook until reduced to 1/2 c. about 5 min. Discard lime strips and mint sprigs, cool. Stir in chopped mint, lime juice, and grated lime. Pour over fruit, toss gently.


Serve with:

grilled kabobs
