This lemon bread is nice for a breakfast or brunch treat, or it can be served for dessert by cutting thicker slices and topping them with mixed berries and whipped cream.
Ingredients: |
1.5 cup flour

1.5 tsp. baking powder

1/2 tsp. salt

zest of one lemon

1/3 cup butter, softened

1 cup sugar

2 eggs

1/2 cup milk (any type except skim)

Glaze:

juice of two lemons

1/3 c. sugar

Directions: |
Preheat the oven to 350 degrees.


In a small bowl, stir together flour, baking powder, salt, and lemon zest. In a medium bowl, cream butter and sugar, then mix in eggs. Alternate adding the dry ingredients and milk to the batter until well combined.


Pour batter into a loaf pan that is either well greased or lined with wax paper/parchment.


Bake at 350 for 50-60 min or until just turning light golden at the edges. During baking, stir together the lemon juice and 1/3 cup sugar for the glaze.


While the bread is still hot and in the pan, poke lots of holes in the top with a toothpick. Spoon glaze over top of hot bread slowly so it can absorb. Cool for a bit, then remove from pan so glaze doesn't cause bread to stick in pan.


When cool, slice and serve.
