Rosemary Roasted Chicken with Potatoes

Very fragrant - got rave reviews from my family!


Ingredients:
2 teaspoons paprika

1-1/2 teaspoons crushed rosemary leaves

1 teaspoon minced garlic

1/2 teaspoon coarse ground black pepper

2 tablespoons olive oil

1 teaspoon salt

6 bone-in chicken thighs, skin removed (about 2 pounds) or 4-6 boneless, skinless chicken breasts

1-1/2 pounds small red potatoes, cut into 1-inch cubes



Directions:
1. MIX oil, all of the spices and salt in a large bowl until well combined. Add chicken and potatoes; toss to coat well. Arrange chicken and potatoes in a single layer on a foil-lined 15- by 10- by 1-inch baking sheet that has been sprayed with no-stick cooking spray.



2. ROAST in preheated 425-degree oven for 30 minutes, or until chicken is cooked through and potatoes are tender, turning potatoes occasionally. (Check chicken's doneness with a meat thermometer before serving.)
