I'm a process person. This is why i don't eat salad. It's not because I don't like the way they taste. It's because I detest the process of eating a salad: stabbing away at thin pieces of lettuce on a hard plate, hearing that scraping sound, trying to get multiple items in one bite, unwieldy lettuce leaves, etc. Hence my love for this simple Un-salad. It's got a lot of flavor and even some vitamins too. Best of all, I can eat it with my fingers. Yay!
Ingredients: |
whole stalks of hearts of romaine (not chopped up!)

pine nuts or pistachios

lime, 1 or 2

extra virgin olive oil

balsamic vinegar

salt & pepper

Directions: |
Pull off whole leaves of the romaine hearts, clean and dry them, and then lay them on a flat plate or platter in a single layer with the open side up. With a big knife coarsely chop up your nuts. Drizzle a light amount of the olive oil and the balsamic on the leaves all over. Sprinkle on your nuts. Cut the lime(s) in half and squeeze some juice on the leaves. Finish with salt and pepper.


Now here is the important part: pick up a whole leaf like a little boat of tasty goodness, bring it up to your mouth, and take a bite! No fork needed! No having to stab away at lettuce and other ingredients trying to get the perfect bite only to end up having salad all over the outside of your mouth because your fork-full of salad is too big for your mouth!


So tasty. So simple. and looks pretty too. Great as an appetizer at dinner parties.
