July 28, 2009
Annie Tegen
easy | 6 servings | prep: 10 minutes | cook:

Easy Peasy. I leave mine in the fridge for a bit before eating to get nice and cool. Should stay crunchy. Perfect on a hot day.

Ingredients:
2 ripe tomatoes

2 cucumbers

sugarsnap peas

1/4 white onion

fresh basil if you have it

salt

pepper

vinagarette dressing

Feta cheese crumbles if you wish

Directions:
Slice up the tomatoes and cukes into nice big chunks, and chop up peas and onions. Rip up basil and throw it in. Salt/pepper to taste. Mix in the vinegar/oil or whatever dressing you have on hand. You can add Feta cheese crumbles too, if you like them.
